I didn’t know what exactly to call this recipe – a quiche, a pie or a pudding? So I just went with quiche, seemed the most appropriate. Anyway, the original recipe I knew only had veggies, but it could get a little bland so I decided to make some changes – added some bacon and cheese in the whole mix.
- 200g cauliflower
- 200g broccoli
- 1 small pepper
- 100g leeks (the white part only)
- 2 slices of bacon cut into cubes
- 4 eggs
- 100g grated mozzarella cheese
- 2 tbsp flour
- 1 tsp baking powder
- 1 tbsp oil
- 1 tbsp butter
- 3 tbsp bread crumbs
- 2 tbsp of grated cheese
- salt, pepper
Method of cooking
Start by boiling the cauliflower and broccoli for 8 minutes; they should still be quite firm after boiling.
While the cauliflower and broccoli are boiling, start cooking the bacon and leeks along with one tablespoon of oil, in a pan.
Drain the water from the veggies you boiled earlier and let them cool down.
Beat the eggs and mix them with the grated mozzarella cheese, salt and pepper.
Cut the pepper into small bits, and then mix all the ingredients into a bowl, until you get a somewhat homogenous composition.
Add butter and bread crumbs on the bottom and sides of the tray you will be using for baking, and then pour the mix in it. Cook it for 30 minutes, then grate the rest of the cheese on top of the quiche, and cook it for another 5 minutes.
The sweet and sour combination gives quite a nice touch to this recipe, and I must say that the end result is quite delicious :}. Before starting to cook this, you should have all your ingredients ready so that preparing this dish will be faster.
- 2-3 tbsp oil (I used palm oil)
- 500g chicken fillets
- 1 medium onion
- 1/2 green pepper
- 1/2 carrot
- 6 round slices of pineapple (cut into smaller bits)
- 200 ml water
- 1.5 tbsp rice vinegar
- 2-3 tbsp sugar
- 2 tbsp soy sauce
- 3 tbsp ketchup
Method of cooking
Fry the chicken in the two tablespoons of oil.
When cooked, take the chicken out of the pan, and add the sliced onion along with the carrot and pepper. Cook for about two minutes.
Add the chicken fillets back in the pan, and cook everything for another two minutes, and then add the pineapple.
Add 150 ml water, put the lid on and let it boil for two minutes. Then, add the vinegar, soy sauce, sugar and ketchup.
Stir and cook until the sauce starts to thicken.
